When the fruit came in it smelled like ripe peaches.
The acids were high so we decided to keep a touch of
residual, 3%, for balance and ensure a delicate,
long finish. 200 cases

Sustainably farmed by the Nelson family in
Hopland. The long hang time in 09 allowed for a
very lush, rich fruit.
